Preparation
- Soak skewers in water while preparing other ingredients. They usually say to soak for 30 mins, but we recommend an hour or more.
- Cut chicken into cubes - about 1 inch by 1 inch. Place in a bowl and cover with teriyaki sauce. Marinate for at least and hour. The chicken will be most tender and juicy if you can let it marinate for a few hours (think morning prep and evening cook time).
- Cut peppers, & onions into bite-sized chunks. Make sure they're not too small! Drain pineapple and reserve juice.
- Assemble skewers as you wish, alternating ingredients and making sure no two same ingredients are next to each other.
- Grill over medium heat, turning occasionally during grilling. Brush with reserved pineapple juice and left over teriyaki sauce from the marinade.
