The "unofficial" start to summer is Memorial Day! This recipe is a unique, gourmet twist on a classic potato salad.

Ingredients



We recommend using the following branded ingredients for this recipe:


red potato(es)

red pepper(s)

Alouette Garlic and Herbs Spreadable Cheese (6.5 oz.)

Black Pearls Pitted Black Olives (3.25 oz.)

Fresh Express Hearts of Romaine (10 oz.)

  • 2 tbsp. balsamic vinegar
  • 1 tsp. shallots
  • 4-5 red potato(es)
  • 3 tbsp. red pepper(s)
  • 1 package Alouette Garlic and Herbs Spreadable Cheese (6.5 oz.)
  • 6 tbsp. Bertolli Olive Oil
  • 2 tbsp. Black Pearls Pitted Black Olives (3.25 oz.)
  • 1 bag Fresh Express Hearts of Romaine (10 oz.)
  • 1 tbsp. McCormick Chives


Preparation




  1. Cook and cool potatoes.

  2. Meanwhile, place cheese in medium sized bowl. In another bowl, whisk together olive oil, vinegar and minced shallots until well blended. Gradually add the vinaigrette mixture to the cheese. Set aside.

  3. Chop red pepper and olives. When potatoes are done, slice.

  4. Place potatoes, scallions, chives, red peppers, and black olives in bowl. Toss with cheese sauce.

  5. Serve on a bed of salad greens.
