Shrimp Quesadillas

Preparation
- Preheat oven to 375 degrees.
- Prepare shrimp scampi in skillet according to instructions, but only cook for 6 minutes as shrimp will continue to cook in the oven.
- Place tortillas flat on ungreased baking sheet and add a layer of the cooked shrimp to one half of each tortilla. Do not add the butter sauce from the scampi.
- Add cheese and a dash of cumin to each tortilla.
- Bake open-faced for 5 minutes. Remove quesadillas from oven, fold over and continue baking for 2-3 more minutes.
- Serve with salsa and sour cream.
Cook's Notes
If you don't have any cumin on hand you can substitute with taco or fajita seasoning packets. And you can add a dash of cayenne pepper for heat!
