Ingredients



We recommend using the following branded ingredients for this recipe:


McCormick Cumin

Mission Whole Wheat Flour Tortillas (17.5 oz.)

Muir Glen Medium Salsa

Sargento Shredded Sharp Cheddar Cheese (8 oz.)

SeaPak Shrimp Scampi (12 oz.)

  • McCormick Cumin
  • 4 Mission Whole Wheat Flour Tortillas (17.5 oz.)
  • 1 jar Muir Glen Medium Salsa
  • 1 package Sargento Shredded Sharp Cheddar Cheese (8 oz.)
  • 1 package SeaPak Shrimp Scampi (12 oz.)


Preparation




  1. Preheat oven to 375 degrees.

  2. Prepare shrimp scampi in skillet according to instructions, but only cook for 6 minutes as shrimp will continue to cook in the oven.

  3. Place tortillas flat on ungreased baking sheet and add a layer of the cooked shrimp to one half of each tortilla. Do not add the butter sauce from the scampi.

  4. Add cheese and a dash of cumin to each tortilla.

  5. Bake open-faced for 5 minutes. Remove quesadillas from oven, fold over and continue baking for 2-3 more minutes.

  6. Serve with salsa and sour cream.



Cook's Notes



If you don't have any cumin on hand you can substitute with taco or fajita seasoning packets. And you can add a dash of cayenne pepper for heat!
