Preparation
- Brew the coffee and let cool. Prepare cupcakes according to package directions, substituting the coffee for the water in the recipe.
- Meanwhile, prepare the frosting as follows: Mix cream cheese, powdered sugar, cocoa, and Kahlua with mixer, adding more confectioners sugar to gain desired consistency if necessary.
- Once cooled, frost cupcakes with frosting.
Cook's Notes
You can garnish with chocolate covered espresso beans, if desired. It's also fun to make mini cupcakes.
