Preparation
- Dice onion and saute in olive oil until translucent. Put garlic in and saute very briefly.
- Add remaining ingredients: tomatoes (crush in hands), beans, bloody mary mix (start with 1 cup and add additional liquid if needed), cumin, chili powder, cayenne and half of the cilantro (chopped).
- Cook on medium-high heat for 20-30 minutes.
- Serve topped with chopped cilantro.
