Preparation
- Crack eggs in bowl and add milk. Whisk with a fork until combined. Add roasted red peppers (pat the water off of them first with a paper towel), diced onion, and salt and pepper to taste. Stir.
- Scramble in pan sprayed with Pam.
- Serve on individual plates and top with a spoonful of salsa and some sprinkled cheese.
