Preparation
- Preheat oven to 350 degrees.
- Add olive oil to a warm skillet. Once oil is warm, add spinach (make sure it's well-drained and patted dry with a towel) and finely chopped garlic. Saute until it is soft (not completely cooked). Remove from heat and set aside.
- In a large bowl, combine ground turkey, chopped onions, chopped peppers, bread crumbs, Goya seasoning, pepper and soy sauce until well incorporated. Add milk and beaten egg. Mix until everything is absorbed by the meat mixture.
- On wax paper (or foil) use your finger tips to pat meat mixture into a 12x18-inch rectangle. Spread the spinach and the cheese over the meat mixture within 1 inch of the sides. Beginning at one of the short ends roll up the meat mixture jelly roll style. Use the foil to lift the mixture.
- Place in a loaf pan and bake in oven 1 hour.
- Brush BBQ sauce on top and bake for an additional 10 minutes.
