Ingredients



We recommend using the following branded ingredients for this recipe:

Bertolli Olive Oil

Guinness Stout

Spice World Minced Garlic

Tyson Chicken Breasts

  • 4-8 new potato(es)
  • 2 shallots
  • 6-10 baby carrots
  • 4-8 mushroom(s)
  • 3 tbsp Bertolli Olive Oil
  • 1 bottle Guinness Stout
  • 1-2 tsp Spice World Minced Garlic
  • 2-4 Tyson Chicken Breasts


Preparation




  1. Heat oil in large skillet over medium heat. Once the oil is thin brown the cleaned, seasoned chicken breasts, turning frequently. Should take about 8 or 9 minutes. Remove from skillet and set aside.

  2. Roughly chop veggies. Turn down heat on oil to medium/medium low and add shallots. Saute for about 5 minutes. Then add in potatoes, carrots, chicken and cover with beer. Season with salt and black pepper.
    Note: To shorten cook time place potatoes, carrots & a sprinkle of water in a microwave safe bowl and cover with plastic wrap. Steam in microwave for about 3 minutes. Then add to onion mixture. This will decrease the cook time by about 10 minutes

  3. Simmer for about 15 minutes, until veggies are soft (not mushy, just soft!). Add mushrooms and simmer for another 3-5 minutes. Add green onions and simmer for 2 minutes (don't let them get too soggy - you want them for a bit of crunch and texture).



Cook's Notes



I suggest using 2 potatoes and a handful of chopped carrots and mushrooms per person. That way you can easily scale up or down for this recipe. Also, very simple to substitute onions for shallots if you'd like.
