Preparation
- Debone and chop the chicken into small bite-sized pieces. Chop the onion and slice the celery.
- Saute the onion and celery in olive oil in a large pot until tender. Add the remaining ingredients, except the carrots. Cook for 25-30 minutes. Add carrots the last 10 minutes.
Cook's Notes
In a pinch I have used canned chicken. I have found a rotisserie chicken yields about 20 ounces. I serve it with crusty bread or rolls and a large green salad. If company is coming, I might a quick dessert to the menu.
