Ingredients



We recommend using the following branded ingredients for this recipe:

Rotel Original Diced Tomatoes and Green Chilies (10 oz.)

Sea Choice Tilapia

  • 2-4 sprigs cilantro
  • 1 lime(s)
  • 1 can Rotel Original Diced Tomatoes and Green Chilies (10 oz.)
  • 2-4 filets Sea Choice Tilapia


Preparation




  1. Preheat oven to 350 degrees.

  2. Cut a piece of aluminum foil for each fillet (large enough to wrap into a pouch). Lay on a baking sheet and spray with cooking spray.

  3. Place fish on foil and cover each fillet with a spoonful of Rotel, a sprig of cilantro, a slice of lime and some lime juice. If you don't have fresh cilantro you can sprinkle a small palmful (1/2 teaspoon) of dried cilantro on each fillet.

  4. Wrap up each fillet in the foil, making sure the pouch is sealed completely but not too tightly wrapped around the fish.

  5. Bake for 30 minutes.

  6. Serve over rice and with a nice green veggie on the side. Enjoy!

Comment: This fish was fantastic! The fresh lime and fresh cilantro are amazing. Take the extra time and spring for the fresh ingredients ... it was better than most fish I have at restaurants.
