![]() Carrie, FunnySpoon Kitchens I love to cook. However, I tend do my best cooking on the weekends, not on Monday. I have two young kids, a husband who travels, a business to run and a teensy social life (on good days!). I do a decent job of juggling it all, but no one's ever mistakenly called me Martha! It's hard to plan our dinners for the week so that I know exactly what we're having when I walk in the door. It's a nightly scramble to figure out what's for dinner and actually prepare it before my son eats three NutriGrain bars and considers that dinner. Frozen pizza and toasted cheese sandwiches are two staples at my house, but they get old. Even for my 4 year old. My FunnySpoon recipes come from a desire to provide great meals for my family without spending hours doing it. I combine my passion for cooking with pre- or partially-prepared items from the store. Then presto - a great meal in just a little time. And it's so simple that I still have a little me-time! And that's good for EVERYONE!!

| ![]() Vicki, FunnySpoon Kitchens I love to eat. For me, cooking is just the process that gets me there. I've mastered the art of the microwave and toaster oven (and occasionally, gasp, the stove), and can get a meal on the table in minutes. However, for years I struggled with how to make that meal actually taste good and also be healthy. Compound that with a busy social life that involves lots of dinner parties and cocktail hours where all eyes are on your creations and you've got a lot of pressure to make something fantastic! My FunnySpoon recipes focus on an appealing presentation while secretly only taking a few minutes to make. Squeezed between work, working out, and hanging out, I manage to eat healthy (for the most part!), tasty meals and throw fab parties where my appetizers and main dishes get rave reviews everytime!

As author of Living the Thin Life, most of my cooking (and eating!) is healthy and low-calorie. I want to be able to enjoy the occasional treat or meal out, so the meals I prepare at home need to be balanced & healthy to allow for that. I also work full-time, so I don't have much time to prepare a healthy meal during the week. Add to that a husband who detests anything resembling diet food and you can see how making a good meal is a challenge! However, over the years I've created some really great recipes that are healthy and easy to prepare. The most enjoyable aspect of cooking for me is to try new low-cal products or to substitute unique items (like applesauce for oil in cake recipes) that still taste great but aren't going to add to my waistline. My FunnySpoon recipes are all low-calorie options with full-flavor taste. And they're all husband-approved!
I've been a vegetarian for more years than I can remember and it's really helped my creativity in the kitchen! I want to enjoy what I eat (and not be stuck with plain, boring veggies all the time), but need to make sure it's fully vegetarian and healthy, too! I'm also just out of college so until I start making the big bucks, I'd like to make sure my recipes don't break the bank! Add to that the fact that I work full-time, have my crazy puppy dying for attention and a good run the minute I walk in the door - I need something on the table, STAT! So you'll find that my recipes are primarily vegetarian, healthy and quick - perfect for my lifestyle!
I was born and raised in comfortably sunny California and am currently living in Paris. Cooking and family meals have always been a huge part of my life, which explains my passion for food! However, considering that I am a recent graduate, time and money are usually a concern. I am always on the lookout for recipes that can save precious minutes, do not have tons of ingredients, and most importantly, still taste incredibly delicious. Plus, I am keen on being healthy and adding color in my dishes. That's a tall order! That's where FunnySpoon comes in. Simplicity can be awesome and rewarding when done right. That's exactly what I love about the FunnySpoon concept and it's what inspires my recipes!
I've been an on-again-off-again vegetarian for most of my life but recently recommitted to being a vegetarian 24/7. On the one hand it's easy - I have years of practice cooking fabulous veggie meals. On the other hand, I've gotten used to some yummy things that I now need to find substitutes for. Not to mention I have an extremely athletic boyfriend who has a huge appetite - a plate of veggies just isn't going to cut it. Also, between working full-time and applying for (and recently getting accepted to) grad school, I don't have much time to experiment. When I do have time in the kitchen, I enjoy what I create and love sharing my new recipes with friends - from book club to 80's theme nights! My recipes are vegetarian-for-everyone - meaning, they meet my criteria of being meat-free but taste so good that meat-eaters will enjoy them, too!
